THE ITALIAN DOUGHBOY: Pizza Fritta




FRIED DOUGH - AN OLD ITALIAN FAVORITE 
1 1/2 c. olive oil
1 1/2 c. vegetable oil
1 lb. all purpose dough

Pour both oils into an 8 inch skillet, until the skillet is half full. Heat the oils over medium heat. Meanwhile, prepare your pieces of dough. Break off pieces of dough the size of the palm of your hand. Flatten each piece with your hands until it is 1/2 to 1 inch thick. With a fork, prick the top of each piece of dough all over.When the oil is very hot, but not smoking, begin to fry the dough. Cook as many pieces as you can fit in the skillet at the same time. When the pieces become light brown on one side, turn them. When the other side is also light brown, transfer the fried dough to a paper towel to drain. Sprinkle with powdered sugar. Makes about 6 pieces of fried dough.
