Okay, it is quite simple.
Sauté 2 cups chopped celery in ½ cup vegetable oil In a 3
quart saucepan until celery is partially cooked.
Sprinkle with Salt, Pepper, Cumin
and Cajun Seasoning to taste.
Pour in 16 oz bag of Brown Rice and continue to fold rice
into celery at 3-5 minutes intervals giving the rice a chance to crisp between
folds.
Pour in 16 oz of water or chicken stock. Lower heat and let
simmer until liquid is absorbed.
Enhance with a sprig of Basil and grated Pecorino Roman Italian Cheese.

Excellent with broiled Salmon, Chicken Breast or any meat
you desire.
