MY BAKED EGGPLANT FIESTA


Bake Eggplant Fiesta

2 Medium Eggplant cubed
2 Medium onions cubed
4 small tomatoes cubed
2 cloves of garlic smashed and cut
Sprinkle with salt, pepper, red pepper seeds, oragano
¼ cup EVOO, 1 small can tomato sauce, 1 small can water
Topped with lemon pepper herb from my garden


While I was shopping for groceries, I found the eggplant and the tomatoes at the markdown section and decided to be innovative and whip up this BAKED EGGPLANT FIESTA. The photo is what it looked like before I covered it tightly with aluminum foil to allow it to steam itself and popped it in the oven at 350 degrees for about 90 minutes. I will show you the finished Fiesta after cooking.
