RAINY DAY WHITE ZUCCHINI SIGNATURE PIZZA



JUST DEFROSTED A BALL OF PIZZA DOUGH LAST EVENING. THIS MORNING I  SPRAYED THE PIZZA PAN WITH SOME EVOO.

IN THE MEANTIME, I MIXED 4 SLENDER ZUCCHINI CUBED WITH 2 CUBED ONIONS, PUT THEM ALL IN A BOWL, DRIZZLED ALL WITH EVOO, SPRINKLED SALT AND PAPPER, AND SOME CAJUN SEASONING. YOU CAN USE ANY SEASONING YOU LIKE.

SPREAD THE MIXTURE ON A OBLONG BAKING PAN COVERED WITH ALUMINUM FOIL. PLACED THE PAN ON THE SECOND LEVEL DOWN AND LET THEM BROIL TO BROWN.

I TOOK THE PIZZA DOUGH AND WIPED DOWN THE BOWL PICKING UP THE EVOO AND SEASONINGS THAT WERE LEFT IN THE BOWL.

I PLACED THE PIZZA DOUGH ON THE ROUND PIZZA PAN AND SPREAD THE DOUGH.
DRIZZLED A LITTLE EVOO ON THE PIZZA DOUGH AND LET IT STAND UNTIL THE ZUCCHINI AND ONIONS WERE TOASTED.

WHEN THE ZUCCHINI AND ONIONS WERE READY, I SPREAD THE MIXTURE ON TOP OF THE PIZZA DOUGH, SPRINKLED WITH SHREDDED CHEESE AND BAKED IN A 400 DEGREE OVEN FOR 25 TO 30 MINUTES DEPENDING HOW COOKED YOU LIKE IT.
