Broiled Zucchini Appetizer or Side

What to do when someone brings you a fairly large zucchini from their garden.

Cut Zucchini into cubes and place in a large bowl.
You can also cube onions into large or small pieces and stir in.
Another addition may be to cube tomatoes and add to mixture,
or add cubed tomatoes after zucchini has broiled to keep the taste of tomato fresh.

Pour 1/4 cup EVOO over zucchini. Sprinkle with Salt, pepper, italian seasoning, chili powder, cajun seasoning, cumin and a little crushed terragon.

Seasoning is optional and creative as you can sprinkle whatever your taste buds desire on the zucchini cubes.

Place under broiler. I usually place on second level so as to let the zucchini cook a little longer. Check zucchini to determine how broiled you wish them to be(Golden Brown 1/2 hr.)

Toward the end of the broiling process you can place sliced tomatoes on top for a short while to be used as garnish when you plate the zucchini.

Last but not least, sprinkle grated pecorino romano cheese on top and serve. Yumlicious!
