Crockpot Chicken Puttanesca

Crock Pot Chicken Puttanesca


Prep time: 30 minutes  Cook time: 7 hrs/6 hrs  Serves 6

A nice spicy chicken stew with yumlicious Puttanesca flavor!!

Ingredients:  3 lbs boneless skinless chicken thighs
                     1 large onion sliced thin
                     1 6 oz can of tomato paste
                     1 20 oz can of petite diced tomatoes
                     1 Roasted Red Pepper
                     1 8 oz can of baby bella mushrooms
                     6 chopped garlic cloves
                     1 tbsp Italian Seasoning
                     12 black olives sliced
                     1 tsp salt or more to taste
                     1/2 tsp crushed red pepper or more to taste
                     1/2 cup dry white wine or red wine
                   

Lay sliced onion in bottom of crockpot. Place chicken on top.  In Large bowl mix all other ingredients and pour over chicken. Cook on low for 7 hours or high for 6 hours.
